Ingredients
- Raw Chicken Breast
- Zucchini
- Raw Carrot - peeled
- Uncooked Brown Rice
- Olive Oil
- Brown Onion
- Garlic cloves
- Ground Cumin
- Paprika
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
Instructions
- 1.Season the chicken with cumin, paprika, salt and black pepper.
- 2.Heat the olive oil in a frying pan over medium heat and cook the onion for 2 minutes until softened.
- 3.Add the garlic and chicken, cooking for 5–6 minutes until lightly browned.
- 4.Stir in the carrot and cook for 3 minutes.
- 5.Add the zucchini and cook for another 3 minutes until just tender.
- 6.Mix in the cooked brown rice and stir well to combine all the ingredients.
- 7.Cook for another 2–3 minutes, stirring occasionally, until everything is heated through.
- 8.Garnish with fresh parsley and serve immediately.
