Ingredients

- Mozzarela

Instructions
- 1.Preheat oven to 200°C. Line a baking tray with baking paper.
- 2.Dice the sweet potato into 1cm cubes and roast on the prepared tray for 10 minutes, or until softened.
- 3.Lay the protein wrap on the tray and spread the tinned tomatoes across the base, leaving a small gap at the edges.
- 4.Arrange the roasted sweet potato and spinach on the wrap, then carefully pour the egg whites over the top.
- 5.Crack the whole egg into the centre and sprinkle with mozzarella and a pinch of dried oregano.
- 6.Bake for 8-10 minutes, or until the egg white is set and the cheese is golden and bubbling.
