Ingredients

  • Egg
  • Mozzarela
  • Dried Oregano
  • Purple Sweet Potato
  • Baby Spinach
  • Olive Oil
  • White Wrap Bread
  • Tomato Sauce

Instructions

  1. 1.Preheat oven to 200°C. Line a baking tray with baking paper.
  2. 2.Dice the sweet potato into 1cm cubes and roast on the prepared tray for 10 minutes, or until softened.
  3. 3.Lay the protein wrap on the tray and spread the tinned tomatoes across the base, leaving a small gap at the edges.
  4. 4.Arrange the roasted sweet potato and spinach on the wrap, then carefully pour the egg whites over the top.
  5. 5.Crack the whole egg into the centre and sprinkle with mozzarella and a pinch of dried oregano.
  6. 6.Bake for 8-10 minutes, or until the egg white is set and the cheese is golden and bubbling.
