Ingredients

  • Uncooked Brown Rice
  • Eggs
  • Slow Cooked Chicken Stock
  • Can Peas
  • Carrots
  • Soy Sauce

Instructions

  1. 1.Heat a non-stick skillet over medium heat.
  2. 2.Add the carrots and peas and cook for about 2 minutes, stirring occasionally.
  3. 3.Add the diced chicken and cook for another minute until heated through.
  4. 4.Add the rice and break up any clumps with a spatula.
  5. 5.Push the rice mixture to one side of the skillet.
  6. 6.Crack the egg into the empty side and scramble it gently.
  7. 7.Once the egg is mostly cooked, mix it into the rice.
  8. 8.Add the soy sauce and stir well to coat all ingredients evenly.
  9. 9.Cook for another 1–2 minutes.
  10. 10.Serve immediately.
