Ingredients

  • Kangaroo Steak
  • Purple Sweet Potato
  • Carrot Cake
  • Olive Oil

Instructions

  1. 1.Preheat oven to 200C and line a tray with baking paper.
  2. 2.Cut sweet potato and carrot into wedges, toss with 7g of olive oil and salt, and roast for 20 minutes.
  3. 3.Rub the kangaroo steak with the remaining olive oil and season with salt and pepper.
  4. 4.Sear the kangaroo in a hot pan for 3 minutes per side for medium-rare, then rest for 5 minutes before slicing.
  5. 5.Serve the sliced kangaroo over the roasted root vegetables.
