Instructions
- 1.Preheat oven to 200C and line a tray with baking paper.
- 2.Cut sweet potato and carrot into wedges, toss with 7g of olive oil and salt, and roast for 20 minutes.
- 3.Rub the kangaroo steak with the remaining olive oil and season with salt and pepper.
- 4.Sear the kangaroo in a hot pan for 3 minutes per side for medium-rare, then rest for 5 minutes before slicing.
- 5.Serve the sliced kangaroo over the roasted root vegetables.
