Ingredients

  • Raw Sweet Potato - unpeeled
  • Extra Lean Beef Mince
  • Egg
  • Simply Egg Whites
  • Baby Spinach
  • Cherry Tomatoes
  • Olive Oil

Instructions

  1. 1.Peel and dice the sweet potato into small 1cm cubes.
  2. 2.Heat olive oil in a non-stick skillet over medium-high heat. Add sweet potato and cook for 10-12 minutes, stirring occasionally, until golden and tender.
  3. 3.Add the lean beef mince to the skillet, breaking it up with a wooden spoon. Cook until browned.
  4. 4.Stir in the cherry tomatoes and spinach, cooking until the spinach has wilted.
  5. 5.Whisk the whole egg and egg whites together in a small bowl.
  6. 6.Reduce heat to medium, pour the egg mixture over the beef and potatoes. Stir gently until the eggs are just set and fluffy.
  7. 7.Season with salt and pepper to taste before serving.
