Ingredients
- Raw Sweet Potato - unpeeled
- Extra Lean Beef Mince
- Egg
- Simply Egg Whites
- Baby Spinach
- Cherry Tomatoes
- Olive Oil
Instructions
- 1.Peel and dice the sweet potato into small 1cm cubes.
- 2.Heat olive oil in a non-stick skillet over medium-high heat. Add sweet potato and cook for 10-12 minutes, stirring occasionally, until golden and tender.
- 3.Add the lean beef mince to the skillet, breaking it up with a wooden spoon. Cook until browned.
- 4.Stir in the cherry tomatoes and spinach, cooking until the spinach has wilted.
- 5.Whisk the whole egg and egg whites together in a small bowl.
- 6.Reduce heat to medium, pour the egg mixture over the beef and potatoes. Stir gently until the eggs are just set and fluffy.
- 7.Season with salt and pepper to taste before serving.
