- Tasty cheese
- Black beans

- Raw Beef Mince - lower fat
- Olive Oil
- Red Onion
- Fresh Oregano
- Raw Sweet Potato - unpeeled
- Limited Edition Taco Spice Mix Lime & Jalapeno
Instructions
- 1.Warm up some oil in a large pan over medium heat and toss in your diced onions and beef mince.
- 2.Cook the mixture for about 5 to 10 minutes until the beef is browned and the onions are beautifully soft.
- 3.While the beef sizzles, dice your sweet potatoes and place them in a microwave-safe dish with a splash of water.
- 4.Cover and microwave on high for 8 minutes until tender, making sure to drain them well afterward.
- 5.Stir the spice mix and oregano into your beef, then fold in the beans, tomatoes, and those tender sweet potatoes.
- 6.Bring the pan to a boil, then lower the heat and let it simmer for 5 minutes until the beans are soft.
- 7.Preheat your oven to 180°C and transfer everything into an oven-proof dish with a good sprinkle of cheese on top.
- 8.Bake for about 10 minutes until the cheese is perfectly melted and bubbly.
- 9.Season everything to taste and finish with a handful of fresh coriander before serving.
