  • Black beans
  • Diced Tomatoes
  • Coriander
  • Raw Beef Mince - lower fat
  • Olive Oil
  • Red Onion
  • Fresh Oregano
  • Raw Sweet Potato - unpeeled
  • Limited Edition Taco Spice Mix Lime & Jalapeno

Instructions

  1. 1.Warm up some oil in a large pan over medium heat and toss in your diced onions and beef mince.
  2. 2.Cook the mixture for about 5 to 10 minutes until the beef is browned and the onions are beautifully soft.
  3. 3.While the beef sizzles, dice your sweet potatoes and place them in a microwave-safe dish with a splash of water.
  4. 4.Cover and microwave on high for 8 minutes until tender, making sure to drain them well afterward.
  5. 5.Stir the spice mix and oregano into your beef, then fold in the beans, tomatoes, and those tender sweet potatoes.
  6. 6.Bring the pan to a boil, then lower the heat and let it simmer for 5 minutes until the beans are soft.
  7. 7.Preheat your oven to 180°C and transfer everything into an oven-proof dish with a good sprinkle of cheese on top.
  8. 8.Bake for about 10 minutes until the cheese is perfectly melted and bubbly.
  9. 9.Season everything to taste and finish with a handful of fresh coriander before serving.
