- Purple Sweet Potato

Instructions
- 1.Cut the sweet potato into small cubes.
- 2.Roast or air fry the sweet potato for approximately 15 minutes with olive oil, salt, and herbs.
- 3.Season the beef fillet with salt and pepper.
- 4.Heat a frying pan until very hot.
- 5.Sear the steak for approximately 3–4 minutes on each side for medium doneness.
- 6.Let the steak rest for 3 minutes before slicing.
- 7.Assemble the salad with leaves, cucumber, and cherry tomatoes.
- 8.Mix lemon juice and Dijon mustard to make the dressing.
- 9.Slice the steak and serve on top of the salad with the roasted sweet potato.
