Ingredients

  • Barramundi Fillet
  • Uncooked Brown Rice
  • Crispy Broccoli Florets
  • Olive Oil
  • Garlic cloves
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground
  • Curly Parsley

Instructions

  1. 1.Cook the rice brown according to the instructions.
  2. 2.Season the barramundi with salt, pepper and lemon juice.
  3. 3.Steam or boil the broccoli for 3 minutes and drain.
  4. 4.Heat the olive oil in a non-stick frying pan over medium heat.
  5. 5.Cook the fish for 4 minutes on one side, then turn and cook for another 3–4 minutes until fully cooked.
  6. 6.Remove the fish. In the same pan, cook the garlic for 30 seconds, then toss in the broccoli for 2 minutes.
  7. 7.Serve with the brown rice and garnish with parsley if desired.
