Instructions

  1. 1.Preheat the oven to 400°F (200°C).
  2. 2.Arrange the zucchini halves cut-side up on a baking tray.
  3. 3.Brush the surface lightly with olive oil and season with a small pinch of salt.
  4. 4.Bake for 12 minutes until the zucchini begins to soften.
  5. 5.Remove from the oven and evenly distribute the goat cheese over each half.
  6. 6.Sprinkle with chopped walnuts and thyme.
  7. 7.Return to the oven for another 5–6 minutes, until the cheese is warm and slightly creamy.
