Instructions
- 1.Preheat the oven to 400°F (200°C).
- 2.Arrange the zucchini halves cut-side up on a baking tray.
- 3.Brush the surface lightly with olive oil and season with a small pinch of salt.
- 4.Bake for 12 minutes until the zucchini begins to soften.
- 5.Remove from the oven and evenly distribute the goat cheese over each half.
- 6.Sprinkle with chopped walnuts and thyme.
- 7.Return to the oven for another 5–6 minutes, until the cheese is warm and slightly creamy.
- 8.Allow to cool for 2 minutes before serving.
