  • Baby Spinach
  • Fresh whole Mushrooms
  • Milk
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground
  • Mixed Grain Bread

Instructions

  1. 1.Preheat the oven to 180°C.
  2. 2.Heat the olive oil in a small oven-safe dish or skillet.
  3. 3.Cook the mushrooms for 4–5 minutes until browned.
  4. 4.Add the spinach and cook until wilted.
  5. 5.Transfer the vegetables to a small baking dish if needed.
  6. 6.Crack the eggs over the vegetables.
  7. 7.Add a tablespoon of milk around the eggs.
  8. 8.Season with salt and pepper.
  9. 9.Bake for 10–12 minutes until the whites are set.
