Instructions
- 1.Preheat the oven to 180°C.
- 2.Heat the olive oil in a small oven-safe dish or skillet.
- 3.Cook the mushrooms for 4–5 minutes until browned.
- 4.Add the spinach and cook until wilted.
- 5.Transfer the vegetables to a small baking dish if needed.
- 6.Crack the eggs over the vegetables.
- 7.Add a tablespoon of milk around the eggs.
- 8.Season with salt and pepper.
- 9.Bake for 10–12 minutes until the whites are set.
- 10.Serve with toasted bread.
