Instructions
- 1.Preheat the oven to 180°C (350°F).
- 2.Lightly grease two muffin cups with olive oil spray.
- 3.Crack the eggs into a mixing bowl.
- 4.Add the milk, salt, and black pepper, then whisk until smooth.
- 5.Stir in the mozzarella, Parmesan, diced capsicum, chopped spinach, and onion.
- 6.Mix well to evenly distribute all the ingredients.
- 7.Divide the mixture equally between the prepared muffin cups.
- 8.Bake for 16–18 minutes, or until the eggs are fully set and lightly golden on top.
- 9.Remove from the oven and allow the cups to cool for 2–3 minutes.
- 10.Carefully loosen the edges with a butter knife and lift the breakfast cups out of the muffin tray.
- 11.Serve warm with sliced avocado or fresh fruit if desired.
