Ingredients

  • Eggs
  • Mozzarella Cheese
  • Parmesan Cheese Block
  • Red Capsicum
  • Baby Spinach
  • Red Onion
  • Milk
  • Sea Salt
  • Black Pepper, Ground
  • Olive Oil Spray

Instructions

  1. 1.Preheat the oven to 180°C (350°F).
  2. 2.Lightly grease two muffin cups with olive oil spray.
  3. 3.Crack the eggs into a mixing bowl.
  4. 4.Add the milk, salt, and black pepper, then whisk until smooth.
  5. 5.Stir in the mozzarella, Parmesan, diced capsicum, chopped spinach, and onion.
  6. 6.Mix well to evenly distribute all the ingredients.
  7. 7.Divide the mixture equally between the prepared muffin cups.
  8. 8.Bake for 16–18 minutes, or until the eggs are fully set and lightly golden on top.
  9. 9.Remove from the oven and allow the cups to cool for 2–3 minutes.
  10. 10.Carefully loosen the edges with a butter knife and lift the breakfast cups out of the muffin tray.
  11. 11.Serve warm with sliced avocado or fresh fruit if desired.
