Ingredients

  • Raw Chicken Breast
  • Raw Carrot - peeled
  • Sweetcorn Kernals
  • Olive Oil
  • Garlic cloves
  • Dried Oregano
  • Dried Rosemary
  • Parmesan Cheese Block
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Place the chicken breast in a small baking dish.
  3. 3.Arrange the carrot slices and sweetcorn around the chicken.
  4. 4.Drizzle the olive oil over the chicken and vegetables.
  5. 5.Sprinkle the garlic, oregano, rosemary, salt and black pepper evenly over everything.
  6. 6.Bake for 30 minutes.
  7. 7.Remove the dish from the oven and sprinkle the Parmesan cheese over the chicken and vegetables.
  8. 8.Return to the oven for another 5 minutes, or until the cheese is lightly golden and the chicken reaches an internal temperature of 75°C.
  9. 9.Garnish with chopped parsley and serve immediately.
