Ingredients

  • Basa Fillet
  • Potato
  • Olive Oil
  • Cherry Tomato
  • Garlic cloves
  • Dried Oregano
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Preheat the oven to 200°C and line a baking tray with baking paper.
  2. 2.Toss the potatoes with olive oil, garlic, oregano, salt and pepper. Roast for 15 minutes.
  3. 3.Remove the tray from the oven and place the cod fillet and cherry tomatoes beside the potatoes.
  4. 4.Season the basa with a little salt, pepper and half of the lemon juice.
  5. 5.Return the tray to the oven and bake for 10–12 minutes, or until the fish flakes easily with a fork.
  6. 6.Sprinkle the parsley over the fish and potatoes.
  7. 7.Serve immediately with the remaining lemon juice squeezed over the top.
