Ingredients
- Basa Fillet
- Potato
- Olive Oil
- Cherry Tomato
- Garlic cloves
- Dried Oregano
- lemon juice
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
Instructions
- 1.Preheat the oven to 200°C and line a baking tray with baking paper.
- 2.Toss the potatoes with olive oil, garlic, oregano, salt and pepper. Roast for 15 minutes.
- 3.Remove the tray from the oven and place the cod fillet and cherry tomatoes beside the potatoes.
- 4.Season the basa with a little salt, pepper and half of the lemon juice.
- 5.Return the tray to the oven and bake for 10–12 minutes, or until the fish flakes easily with a fork.
- 6.Sprinkle the parsley over the fish and potatoes.
- 7.Serve immediately with the remaining lemon juice squeezed over the top.
