Ingredients

  • Raw Pork Fillet
  • White Tortilla
  • Cos Lettuce
  • Raw Carrot - peeled
  • Hass Avocado
  • Plain Yoghurt
  • Wholegrain Mustard
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Season the pork with salt and pepper.
  2. 2.Heat a non-stick frying pan over medium-high heat.
  3. 3.Cook the pork for about 5 minutes on each side until fully cooked.
  4. 4.Remove from the pan and let it rest for 2 minutes before slicing.
  5. 5.In a small bowl, combine the Greek yoghurt, wholegrain mustard, and lemon juice.
  6. 6.Warm the tortilla in a dry frying pan for about 30 seconds on each side.
  7. 7.Spread the yoghurt dressing over the tortilla.
  8. 8.Layer the lettuce, grated carrot, sliced avocado, and pork.
  9. 9.Fold in the sides and roll tightly into a wrap.
  10. 10.Slice in half and serve immediately.
