- Corn Kernels
- Raw Carrot - peeled
- Eggs
- Wholemeal Plain Flour
- Reduced Fat Milk
- Baking Powder
- Olive Oil
- Sea Salt
- Black Pepper, Ground
- Greek Yogurt
- Chives
Instructions
- 1.In a mixing bowl, combine the corn, grated carrot, egg, flour, milk and baking powder.
- 2.Season with salt and black pepper.
- 3.Stir until a thick batter forms.
- 4.Heat the olive oil in a non-stick frying pan over medium heat.
- 5.Spoon the batter into the pan, making 3–4 small fritters.
- 6.Cook for about 3 minutes on each side until golden brown.
- 7.Transfer the fritters to a serving plate.
- 8.Mix the Greek yoghurt with the chopped chives.
- 9.Serve the fritters with the yoghurt on the side.
