Ingredients

  • Corn Kernels
  • Raw Carrot - peeled
  • Eggs
  • Wholemeal Plain Flour
  • Reduced Fat Milk
  • Baking Powder
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground
  • Greek Yogurt
  • Chives

Instructions

  1. 1.In a mixing bowl, combine the corn, grated carrot, egg, flour, milk and baking powder.
  2. 2.Season with salt and black pepper.
  3. 3.Stir until a thick batter forms.
  4. 4.Heat the olive oil in a non-stick frying pan over medium heat.
  5. 5.Spoon the batter into the pan, making 3–4 small fritters.
  6. 6.Cook for about 3 minutes on each side until golden brown.
  7. 7.Transfer the fritters to a serving plate.
  8. 8.Mix the Greek yoghurt with the chopped chives.
  9. 9.Serve the fritters with the yoghurt on the side.
