Instructions
- 1.In a small saucepan, combine the rolled oats, instant coffee, and 1 cup of water.
- 2.Place over medium heat and simmer for 5-7 minutes, stirring occasionally, until the oats have absorbed the liquid and are thick and creamy.
- 3.Remove the saucepan from the heat and vigorously stir in 20g of the pea protein powder for 1 minute until the mixture is smooth and fluffy.
- 4.In a separate mixing bowl, mash the banana with a fork until smooth. Mix in the remaining 15g of pea protein powder and a splash of water to create a thick, creamy layer.
- 5.Transfer the cooked oats to a serving bowl. Spread the banana-protein cream evenly over the top and dust with cocoa powder.
- 6.Finish by drizzling with almond butter and sprinkling with chia seeds for a final crunch.
