Instructions

  1. 1.In a small saucepan, combine the rolled oats, instant coffee, and 1 cup of water.
  2. 2.Place over medium heat and simmer for 5-7 minutes, stirring occasionally, until the oats have absorbed the liquid and are thick and creamy.
  3. 3.Remove the saucepan from the heat and vigorously stir in 20g of the pea protein powder for 1 minute until the mixture is smooth and fluffy.
  4. 4.In a separate mixing bowl, mash the banana with a fork until smooth. Mix in the remaining 15g of pea protein powder and a splash of water to create a thick, creamy layer.
  5. 5.Transfer the cooked oats to a serving bowl. Spread the banana-protein cream evenly over the top and dust with cocoa powder.
  6. 6.Finish by drizzling with almond butter and sprinkling with chia seeds for a final crunch.
