- 1.1. Prepare the Roasted Squash
- 2.• Preheat your oven (typically to around 200°C / 400°F).
- 3.• Slice the butternut squash or pumpkin in half lengthwise. Place the halves on a baking tray.
- 4.• Drizzle olive oil over the flesh and use your hands to rub it in evenly.
- 5.• Roast until the flesh is fork-tender.
- 6.2. Make the Fresh Chimichurri
- 7.• Roughly chop the fresh parsley.
- 8.• Finely dice the red onion and mince the garlic.
- 9.• Place the chopped parsley, diced red onion, and minced garlic into a bowl.
- 10.• Squeeze the juice of the lemon directly into the bowl.
- 11.• Observation Note: While the ingredients are mixed by hand in the bowl, the final plated picture shows a completely smooth, light green sauce. To achieve this final texture, transfer the bowl's contents to a blender or food processor, add a drizzle of olive oil to help it emulsify, and blend until smooth.
- 12.3. Cook the Steak and Broccolini
- 13.• Cook your steak to your desired doneness (the screenshots show a medium-rare cook). Let the steak rest for a few minutes before slicing it into thick strips.
- 14.• Cook the broccolini (steaming, pan-frying, or roasting alongside the squash will work) until tender but still vibrant green.

- 16.• Place one of the roasted squash halves onto a plate. Garnish the top with flaky sea salt and a sprinkle of leftover chopped parsley.
- 17.• Add the cooked broccolini and the rested, sliced steak to the plate.
- 18.• Generously spoon the blended chimichurri over the sliced steak and serve immediately.
