  3. 3.• Slice the butternut squash or pumpkin in half lengthwise. Place the halves on a baking tray.
  4. 4.• Drizzle olive oil over the flesh and use your hands to rub it in evenly.
  5. 5.• Roast until the flesh is fork-tender.
  6. 6.2. Make the Fresh Chimichurri
  7. 7.• Roughly chop the fresh parsley.
  8. 8.• Finely dice the red onion and mince the garlic.
  9. 9.• Place the chopped parsley, diced red onion, and minced garlic into a bowl.
  10. 10.• Squeeze the juice of the lemon directly into the bowl.
  11. 11.• Observation Note: While the ingredients are mixed by hand in the bowl, the final plated picture shows a completely smooth, light green sauce. To achieve this final texture, transfer the bowl's contents to a blender or food processor, add a drizzle of olive oil to help it emulsify, and blend until smooth.
