Instructions
- 1.Peel and dice the sweet potato into 1cm cubes.
- 2.Heat olive oil in a large non-stick frying pan over medium-high heat. Add the sweet potato and cook for 10-12 minutes, stirring occasionally, until golden and tender.
- 3.Add the diced capsicum and paprika to the pan and cook for 3 minutes, until the vegetables soften.
- 4.Drain the tofu and crumble it into the pan with your hands or a fork, creating a scramble-like texture.
- 5.Sprinkle the nutritional yeast over the mixture and stir well. Cook for 5 minutes, until the tofu is heated through and slightly crispy.
- 6.Add the spinach and stir for 1 minute, until just wilted. Season with a pinch of salt and serve immediately.
