Instructions
- 1.Peel and dice the sweet potato into 1cm cubes.
- 2.Heat olive oil in a frying pan over medium heat. Sauté the sweet potato for 8-10 minutes, or until softened and slightly golden.
- 3.Add the drained chickpeas and cook for 3 minutes, or until they begin to crisp.
- 4.In a mixing bowl, whisk together the whole egg and egg whites. Pour the mixture over the vegetables in the pan.
- 5.Gently scramble the eggs for 2-3 minutes, tossing in the spinach during the final minute until wilted.
- 6.Remove from the heat and crumble the feta cheese over the top before serving.
