Ingredients
- Lamb leg roast
- Raw Sweet Potato - peeled
- Brown Rice
- Olive Oil
- Baby Spinach
- Greek Feta Cheese
- Honey
Instructions
- 1.Boil the Basmati Rice in water for 10-12 minutes until tender, then drain and set aside.
- 2.Dice the Sweet Potato into 1cm cubes and pan-fry with 4g of Olive Oil over medium heat for 8-10 minutes until softened and golden.
- 3.Slice the Lamb Leg into thin strips and sear in a separate hot pan with the remaining 4g of Olive Oil for 3-4 minutes.
- 4.Drizzle the Honey over the lamb in the final minute of cooking, tossing frequently until the meat is sticky and caramelised.
- 5.Place the Spinach and cooked Basmati Rice in a large bowl, then top with the roasted Sweet Potato and honey-glazed lamb.
- 6.Crumble the Feta Cheese over the top to serve.
