Ingredients

  • Fresh Barramundi
  • Purple Sweet Potato
  • Raw Broccoli
  • Olive Oil
  • lemon juice

Instructions

  1. 1.Peel and dice the sweet potato, then boil for 10-12 minutes until soft.
  2. 2.Pat the barramundi skin dry with a paper towel and season with salt.
  3. 3.Heat half the olive oil in a non-stick pan over medium-high heat and cook fish skin-side down for 4 minutes until crispy.
  4. 4.Flip the fish and cook for another 2-3 minutes; steam the broccoli in the same pan with a splash of water.
  5. 5.Drain and mash the sweet potato with the remaining olive oil, then serve with the fish and broccoli.
