Instructions

  1. 1.In a small saucepan, combine rolled oats with 375ml (1 1/2 cups) of water and a pinch of salt. Bring to a simmer for 5 minutes.
  2. 2.While oats simmer, heat sesame oil in a frying pan over medium heat. Sauté sliced mushrooms and pre-cooked chicken breast for 4 minutes, or until lightly browned.
  3. 3.Slowly whisk the egg whites into the simmering oats, stirring constantly for 2-3 minutes until the oats become thick and fluffy.
  4. 4.Stir the fresh spinach into the oats until just wilted.
  5. 5.Transfer the oat mixture to a large bowl and top with the sautéed mushrooms and chicken.
  6. 6.Drizzle with soy sauce and garnish with fresh coriander or spring onion if desired.
