Ingredients

  • Chicken breast
  • Hass Avocado
  • Brown Rice
  • Cherry Tomato
  • Mixed Leafy Greens
  • Olive Oil
  • lemon juice

Instructions

  1. 1.Season the chicken breast with salt, pepper, and half of the lemon juice. Mix well so the flavor is absorbed.
  2. 2.Heat a frying pan with olive oil over medium heat.
  3. 3.Place the chicken in the pan and grill for about 5 minutes on each side until golden brown and fully cooked inside.
  4. 4.Remove the chicken from the pan and let it rest for 2 minutes before slicing into strips.
  5. 5.In a large bowl, add the cooked brown rice.
  6. 6.Add the mixed greens, cherry tomatoes, and sliced avocado.
  7. 7.Place the chicken strips on top.
  8. 8.Finish with the remaining lemon juice and a drizzle of olive oil and serve immediately.
