Instructions
- 1.Season the chicken breast with salt, pepper, and half of the lemon juice. Mix well so the flavor is absorbed.
- 2.Heat a frying pan with olive oil over medium heat.
- 3.Place the chicken in the pan and grill for about 5 minutes on each side until golden brown and fully cooked inside.
- 4.Remove the chicken from the pan and let it rest for 2 minutes before slicing into strips.
- 5.In a large bowl, add the cooked brown rice.
- 6.Add the mixed greens, cherry tomatoes, and sliced avocado.
- 7.Place the chicken strips on top.
- 8.Finish with the remaining lemon juice and a drizzle of olive oil and serve immediately.
