Instructions
- 1.Fill a small saucepan with water and bring it to a boil
- 2.While the water heats, toast the bread until crispy.
- 3.In a small bowl, mash the avocado with a fork.
- 4.Add lemon juice, salt, and pepper.
- 5.Once the water is boiling, reduce the heat to low.
- 6.Crack the egg into a small cup.
- 7.Stir the water gently to create a swirl and carefully drop the egg into the center.
- 8.Cook for about 3 minutes for a soft yolk.
- 9.Spread the avocado mixture over the toast.
- 10.Remove the egg with a spoon and place it on top.
