- Firm Tofu
- Nutritional Yeast
- Sourdough bread
- Pickled mushrooms
- Baby Spinach
- Olive Oil
- Turmeric
Instructions
- 1.Heat the olive oil in a non-stick frying pan over medium-high heat.
- 2.Add the sliced mushrooms and cook for 4-5 minutes, until golden brown and softened.
- 3.Crumble the firm tofu into the pan. Stir in the nutritional yeast and a pinch of turmeric.
- 4.Cook for a further 5 minutes, until the tofu is heated through.
- 5.Add the spinach and toss for 1 minute, until just wilted.
- 6.Toast the rustic sourdough and top with the tofu scramble. Season with salt and pepper to taste.
