Ingredients

  • Firm Tofu
  • Nutritional Yeast
  • Sourdough bread
  • Pickled mushrooms
  • Baby Spinach
  • Olive Oil
  • Turmeric

Instructions

  1. 1.Heat the olive oil in a non-stick frying pan over medium-high heat.
  2. 2.Add the sliced mushrooms and cook for 4-5 minutes, until golden brown and softened.
  3. 3.Crumble the firm tofu into the pan. Stir in the nutritional yeast and a pinch of turmeric.
  4. 4.Cook for a further 5 minutes, until the tofu is heated through.
  5. 5.Add the spinach and toss for 1 minute, until just wilted.
  6. 6.Toast the rustic sourdough and top with the tofu scramble. Season with salt and pepper to taste.
