Ingredients

  • Kangaroo Steak
  • Purple Sweet Potato
  • Olive Oil
  • Baby Spinach

Instructions

  1. 1.Preheat oven to 200C.
  2. 2.Dice 120g Sweet Potato into 1cm cubes and toss with 4g Olive Oil and salt.
  3. 3.Roast sweet potato for 15-18 minutes until golden and tender.
  4. 4.Season 130g Kangaroo Steak with salt and pepper.
  5. 5.Heat remaining 4g Olive Oil in a pan over medium-high heat and sear kangaroo for 3 minutes per side for medium-rare.
  6. 6.Rest meat for 5 minutes, then slice and serve over the roasted sweet potato with 50g Spinach.
