Ingredients
- Kangaroo Steak
- Purple Sweet Potato
- Olive Oil
- Baby Spinach
Instructions
- 1.Preheat oven to 200C.
- 2.Dice 120g Sweet Potato into 1cm cubes and toss with 4g Olive Oil and salt.
- 3.Roast sweet potato for 15-18 minutes until golden and tender.
- 4.Season 130g Kangaroo Steak with salt and pepper.
- 5.Heat remaining 4g Olive Oil in a pan over medium-high heat and sear kangaroo for 3 minutes per side for medium-rare.
- 6.Rest meat for 5 minutes, then slice and serve over the roasted sweet potato with 50g Spinach.
