Ingredients

  • Silken Tofu
  • Simply Egg Whites
  • Sourdough bread
  • Baby Spinach
  • Nutritional Yeast
  • Olive Oil
  • Sea Salt

Instructions

  1. 1.Heat the olive oil in a non-stick frying pan over medium heat.
  2. 2.Add the spinach and sauté for 1-2 minutes until wilted. Remove from the pan and set aside.
  3. 3.Crumble the tofu into the same pan by hand, then pour in the egg whites. Stir in the nutritional yeast and salt.
  4. 4.Scramble for 3-4 minutes, or until the egg whites are cooked through and the tofu is lightly golden.
  5. 5.While the scramble is cooking, toast the sourdough until golden and crisp.
  6. 6.Layer the wilted spinach onto the toasted sourdough, then top with the protein scramble. Serve immediately.
