Ingredients
- Silken Tofu
- Simply Egg Whites
- Sourdough bread
- Baby Spinach
- Nutritional Yeast
- Olive Oil
- Sea Salt
Instructions
- 1.Heat the olive oil in a non-stick frying pan over medium heat.
- 2.Add the spinach and sauté for 1-2 minutes until wilted. Remove from the pan and set aside.
- 3.Crumble the tofu into the same pan by hand, then pour in the egg whites. Stir in the nutritional yeast and salt.
- 4.Scramble for 3-4 minutes, or until the egg whites are cooked through and the tofu is lightly golden.
- 5.While the scramble is cooking, toast the sourdough until golden and crisp.
- 6.Layer the wilted spinach onto the toasted sourdough, then top with the protein scramble. Serve immediately.
